Celeriac, I Never Knew Ya

My last CSA pick-up was on December 12. I’ve got a few veggies still rolling around from that last batch — horse-sized carrots, some cute white potatoes, and a reasonably-sized red cabbage (must cook that this week). Especially during the summer months, I tried to finish one week’s haul before I picked up the next, otherwise I would just be hopelessly behind and stuff would rot. But the share has been smaller as the months got colder, and the vegetables keep longer (no more lettuce mix, sadly).
When I was in Aruba last month, my mom and mother-in-law picked up my share for me, and a celery root (celeriac) was included. It’s kind of ugly, like a turnip but without the redeeming purple bottom. I intended to cook it, I swear. I even looked up prep tips online, and discovered it could be eaten raw in a salad. I have tried, at least once, every single vegetable we got in the share, and I think that aside from the swiss chard and kale I ate everything repeatedly (see: cabbage).
But the poor celery root languished at the back of my produce bin, and when I finally (reluctantly) retrieved it, it felt like one of those squishy stress balls people keep on their desk. Hardly appetizing. So I chucked it, and fell one celery root short of my goal to try everything Roxbury delivered to me. Celeriac, I promise to eat you next year.
