mpm8 Menu Plan Monday, 12/31   1/6

Monday: New Year’s Eve! We’re bringing cold sesame noodles, kitchen sink cookies, chicken satay (new recipe), a crudite tray with dip, and homemade guacamole with salsa and chips.

I’m otherwise feeling uninspired this week, and a little beat down from this past week when my cooking received something way short of an ovation from my boys and J. So I’m planning to be pretty low-key.

Tuesday: leftovers or order in

Wednesday: Mexican squash and ground beef casserole (new to me — I’ll omit the cheese), brown rice

Thursday: mustard-roasted chicken with root veggies (also new)

Friday: spinach & turkey meatballs (from my freezer stash) with spaghetti & sauce

If I can get to my butcher this week, I’ll make one of J.’s favorites, Hungarian goulash, over the weekend.

    My Mom made an amazing goulash! I wish she’d have written down her recipes.

    Do you think the chicken would work w/just breasts? I love the sound of it but we are all about breasts here:) And, of couse skinless, too.

    Merrie, I do think it would work, but you might need to add some broth to the roasting pan and maybe brush the cutlets with olive oil. In the dish with the whole chicken, the fat from the chicken renders down onto the veggies and makes them extra delicious! Plus the chicken stays moist because of the skin. Let me know if you try it! Tomorrow I’m making it with squash, fennel, onions, and parsnips.

    My family really love Brown Rice. It just requires planning since it can take 45 minutes to cook. Since I work fulltime I usually have our teen start before my husband and I finish working downstairs.
