Menu Plan Monday, 1/14 – 1/20

Looks like we’re going to have a snow day Monday, so I may do some extra baking with the kids, depending on how stir-crazy we are. Also, my Monday plan depends on me being able to get to the store for peppers! If I’m snowed in, I’ll do some sort of saute with sausage & broccoli instead.
Monday: sausage & peppers over egg noodles (never made this before, I’m just planning on frying everything up in a pan, plunking over noodles)
Tuesday: leftovers/food from freezer (split pea barley soup?)
Wednesday: tofu baked in almond mint cilantro sauce over brown rice (my first time cooking with tofu as the main ingredient! my mom is playing guinea pig with me)
Thursday: Ina Garten’s chicken chili and cornbread (both new recipes for me)
Friday: leftovers
Saturday: spinach lasagna with whole wheat noodles (my usual lasagna recipe, but trying out whole wheat pasta for the first time)
Sunday: eat out or bring in

Sausage and peppers is one of my standards! To make it juicier, I take the sausage out of the casing and stir fry it like ground meat.

Tonight’s looks great – I made something similar last week and it turned out super tasty. Enjoy the winter weather, I miss it!
