mpm8 Menu Plan Monday, 1/28   2/3

My freezer is packed full of leftovers from the past few weeks, so I’ve got to start making a dent in that stash. I’ll be defrosting homemade chicken soup for lunches, the last pack of spinach & turkey meatballs (just for me for lunches, since no one else liked them), and serving some of the chicken chili I made last week. I’ve still got a couple of quarts of the very blah chickpea & beef stew I made last week in the freezer, too, and I am wondering if there is some way to doctor it up before I serve it again. It just didn’t do anything for me or J. — especially since I make a Hungarian goulash with the same type of meat that he absolutely loves.

Sunday we’re heading to Long Island for our friends’ annual Super Bowl party. I’ve been asked to make a chocolate trifle again — I don’t understand the appeal of this super-simple recipe, but it always gets rave reviews at the party. Since finding and trying out new recipes is one of my favorite parts of cooking, I was contemplating a new trifle this year. But as J. pointed out, “Trying a new trifle is like trying out a new stew. Just stick with the goulash.” So I’ll stick with what I know everyone likes.

Monday: meatballs simmered in tomato sauce, whole wheat spaghetti, steamed broccoli

Tuesday: leftovers

Wednesday: chicken chili (from freezer), egg noodles, roasted cauliflower

Thursday: split pea & barley soup, 40 clove garlic chicken (in the oven this time), challah

Friday: sweet potato & black bean burritos (one of J.’s all-time favorite recipes of mine), brown rice, fruit salsa

Saturday: eat out or take out

Sunday: at a Super Bowl party! I’m making a chocolate trifle, which is always well-received.

    Hey, do you have just a normal salsa recipe that is good? I have tried several and it never really tastes good…always like it is nice and fresh but just missing something.
