The biggest hit of last week’s menu was definitely the sweet potato & black bean burritos. The recipe makes 8 big burritos, so I individually wrap and freeze the leftovers and can defrost them later on as needed. I have to build my freezer stash back up after last week’s menu, which relied heavily on frozen leftovers.

We had a few breakthroughs this week with A. trying new foods. He actually ate a few pieces of the 40-clove garlic chicken I made (still working on getting this recipe right, so I’m not posting it yet). Seriously, that’s the first time I can remember him eating any kind of animal protein other than a McDonald’s chicken nugget since he was 18 months old. He’s 4 now. And as he ate the chicken, he told me “I like this!” Moments likes this encourage me to keep cooking, even if 95% of it goes uneaten by my kids. I’m getting through to them, slowly but surely.

Also this week I am eagerly awaiting the arrival of my first niece! My sister-in-law is due towards the end of this week, so if the baby decides it’s time to come on out my plans will change. I can’t wait to meet her!

Monday: homemade chicken nuggets, spinach pancakes (Praeger’s brand)
Tuesday: grilled cheese sandwiches, sugar snap peas
Wednesday: broccoli & tofu stir fry, whole wheat spaghetti
Thursday: saffron chicken, sauteed spinach, brown rice
Friday: tortellini, tomato & spinach soup, French bread
Saturday: falafel (from a mix) & pita, hummus, Israeli salad
Sunday: take out

    I remember making the 40 Garlic Clove Chicken. We decided if we make it again to peel the garlic.

    Uh…just so you know…I’ll be coming over Friday night for dinner! lol!! Sounds very yummy! And I can’t wait for the 40 garlic clove chicken recipe…I’ve had that on my list several times but have never actually made it yet.

    Looks like a great menu! I’m hoping to make homemade falafel in the next month or so as well (for the first time!) and find it encouraging that others do as well!

    And by the way, I have to be honest and tell you that it was a bit difficult to focus on the menu, as I was completely distracted by the picture of your chocolate trifle below. . . I had to reread your post just to be able to comment effectively! :) I want to go to YOUR Super Bowl party! YUM!!

    Great menu plan. I make similar burritos but with cannelli beans. It’s always a big hit here too. Thanks for the idea of freezing them – never thought of that. Am I right that you freeze the whole thing – mixture in the tortilla?

    Libby, yep I freeze the completed, wrapped burrito before baking it. Works perfectly. — Dara

    Are you going to make tortellini? Or just buy it? I think you should just buy it…making it seems like something that would be hard. Or time consuming at least.

    Jodi, it would never had occurred to me to make the tortellini myself! I buy the Barilla shelf-stable tortellini, it’s a good pantry staple. — Dara
