Menu Plan Monday, 2/11 – 2/17

Last week’s menu was the least-followed plan I’ve made in the past year, but for a happy reason: my niece was born on Wednesday! Plus A. and I had dentist appointments I’d forgotten about on Thursday, so I hadn’t planned properly to cook.
It was a little scary to me that with these proper “reasons” not to cook, it was so easy and comfortable to fall back into the old (apparently not forgotten) route of yogurt or plain noodles for dinner. Dinners that are now the exception rather than rule in my house. It doesn’t make me feel good to feed my family that way, and I don’t enjoy eating that way anymore either.
This week I am going to concentrate on sticking with my plan, which has a nice variety of foods I already know we like, and new recipes to try. We do have busy afternoons this week, so most of my cooking needs to be done (hopefully with A. as my sous chef) right after lunch when G. is napping.
I’ve already got two beautiful eggplants in my fridge ready for Monday, so I’m off to a good start!
Monday: eggplant ricotta bake, whole wheat pasta, green salad
Tuesday: chicken chili (from my freezer), cornbread
Wednesday: leftovers
Thursday: squash, tomato & beef skillet, brown rice
Friday: oven-roasted chicken thighs, steamed broccoli, challah
Saturday: spinach burritos, brown rice, salsa
Sunday: take out or eat out

Ha! Sounds like our week ….we ate two of things listed on my menu! But, you have a much greater excuse. Well…so we eat them this week! Having enchiladas too!

Congratulations on your niece. Are we suppose to confess if we followed last weeks plan? Opps. I always mix it up a day o rtwo.

The spinach burritos are going on my “To Try” list. I have a bag of frozen spinach in my freezer that I am wanting to use up.
Great menu. The egg plant ricotta sounds good also.

I genuinely planned to make roasted cauliflower the same way you did…and I bought it and things got busy and it went a bit brown on the tips in the fridge and i tossed it. Better luck next time:O)
When that happens to my cauliflower I just cut off those pieces. Try it next time! — Dara
