Menu Plan Monday, 2/18 – 2/24

Last week’s biggest success was definitely the squash, tomato & beef skillet, which had lots of extra veggies in it.
I decided to ditch the spinach burritos — J. didn’t think he’d like them, and it was such a cold and dreary day we opted for my goulash instead. I may make the burritos for my mom one night, I know she’d like them! Since I already have the multi-grain tortillas in the house, I’ll use them for Monday’s enchiladas instead.
I’ve been scheduling in a night of take out on Sunday nights, but truthfully none of the local options are appealing to us lately. So this week I’m planning meals for Saturday and Sunday night. If we wind up going out to eat one night, I’ll bump the falafel to a lunch instead.
Monday: cheese enchiladas with green chilis, sugar snap peas
Tuesday: chicken edamame chowder (I’ll make a clear version of this, without dairy, and add noodles for the boys)
Wednesday: broiled lamb chops, orzo, steamed broccoli
Thursday: leftovers
Friday: dinner at my parents’ house
Saturday: falafel & pita, hummus, Israeli salad (didn’t get to this last time)
Sunday: crock pot short ribs (maybe this recipe?), quinoa with carmelized onions, roasted asparagus

Can you believe I am not going to be home one night this week for dinner?
I am planning on making soup, a meatloaf, and chicken for the kids and for lunches…
Now that I started meal planning it isn’t as fun to eat out or eat at playdates:)
