Israeli Salad

Every time I make Israeli salad I think of my mom. She makes a delicious version too, and she has often recounted to me that making it reminds her of the time she spent working on a kibbutz. This tomato and cucumber salad was on the table at most every lunch and dinner I remember from my trip to Israel in 1990.
Can you believe my supermarket was out of parsley? I normally rough chop about half a cup of parsley to add to this salad, but I just went without this time. Other preparations include mint, which I don’t care for… but you might!
1 large cucumber, peeled
4 plum tomatoes, seeded
2 scallions
1 lemon
olive oil
kosher salt
pepper
Chop cucumber, tomatoes, and scallions into a rough dice and combine in a bowl. Squeeze the juice of one lemon over the salad, and the drizzle lightly with olive oil. Add salt and pepper to taste, and serve at room temperature.

What a pretty, healthy salad! I’ll have to try it – C love tomatoes, and would probably love this.

That looks incredible. I’ve been on this kick with scallions and would put them on everything if I could.
I also like that in this photo the food just looks ripe and juicy and not oily.

Did you know that parsley is very easy to grow ? I’ve got stacks of it growing in my back yard ! It grows well in a pot too …
We do grow it in season, but it’s just now getting to be planting weather here! I also get a lot from my farm share. — Dara
