Menu Plan Monday, 2/25 – 3/2

This past week was a great success recipe-wise — everything turned out well and was pretty easy to prepare. I’ll make them all again in the future. There aren’t too many weeks like that!
I think the overall favorite was the cheese enchiladas, with the orange-hoisin short ribs coming in a close second. I loved the chicken, edamame & red pepper soup, but I was the only one that ate it. And I’m still working on making my own granola bars.
I’m aiming for the same success this week as the boys head back to school and we return to our normal routines.
Monday: Hard-boiled eggs, challah rolls, red pepper rings (99 cents/lb. — have you ever seen red peppers that cheap?)
Tuesday: Mexican meatballs (made with ground turkey, cilantro, etc.), whole wheat spaghetti, steamed broccoli
Wednesday: Baked tofu in almond & cilantro sauce, brown rice
Thursday: Overnight macaroni & cheese, garden salad
Friday: Dinner in the city? (kids are sleeping at their grandparents!)
Saturday: Vegetarian chili with cornbread
Sunday: Beef & barley soup (Sharon’s recommended recipe)

Ooh, I like what I am seeing here. Your recipes look very good, I would be more than happy to enjoy the chicken, edamame and red pepper soup with you next time.

My grandma always made beef & barley soup and I LOVED it. Well I picked out the beef but loved the broth. That and some homemade bread…yum!
