mpm8 Menu Plan Monday, 3/3   3/9

This week went well enough meal-wise, at least until the weekend hit. We were just busy doing nothing — plus I got caught up in moving this site to a new host — so neither of my weekend meals were made. I’m ready to get back in the saddle.

I’m at that point again when I need to start making a dent in my freezer stash, so much of this week’s meals just need to be defrosted. Also, I’m quite the social butterfly this week, with two planned dinners out — one my monthly woman’s group, and another with a friend I have been out of touch with for too long (thanks, Facebook!).

This week I’m also going to try a version of Kalyn’s breakfast muffins, adjusting the recipe a bit to be more kid-friendly.

I’m ready to jump back in after two days of no cooking, I miss it!

Monday: Lemon-roasted chicken, rainbow orzo, roasted broccoli

Tuesday: Eggplant-ricotta bake (freezer), whole wheat spaghetti

Wednesday: chicken soup with noodles for the boys; chicken, edamame & red pepper soup for my mom (both from the freezer — I’m out to dinner with girlfriends!)

Thursday: bring in pizza for the boys, I’m out to dinner with a dear old friend

Friday: Saffron chicken with brown rice and sauteed spinach

Saturday: Veggie chili with cornbread (for lunch instead, if we have evening babysitters!)

Sunday: Pea soup with flanken (a traditional Jewish dish, I’m still looking for a recipe)
