Swiss Chard, Three Ways

Cookie magazine runs a regular food item that starts out “so you have some…” and then provides a beautiful photo illustration of how, combined with items from a reasonably-stocked fridge and pantry, you can create three dinners out of the featured ingredient.

The March 2008 issue features my nemesis, swiss chard. We got so much of it in our CSA share last year, and I was so inexperienced with cooking it, that there were times I left it on the table at the pick-up spot because I couldn’t bear trying to cook with it that week. I think I’ll have no problem with it this year!

The swiss chard recipes in Cookie include a lasagna, linguine with chard and egg, and a hash (they make it with pork tenderloin, but I think beef would stand up well next to the chard).

    Swiss Chard is totally one of those foods that I would claim to really like and would order if I saw it on a menu…but I never buy it and really have no idea how to cook it.
