Menu Plan Monday, 3/10 – 3/16

It was muffin mania here this past week: I baked applesauce & oatmeal muffins (good), spinach & cheese muffins (a nice savory change), and corn muffins (an old standby) too.
Two new chicken recipes are keepers as well: lemon-roasted chicken and saffron chicken. The only frustration was that J. nixed my proposed Sunday meal: pea soup with flanken. I’d forgotten to order the meat from the butcher anyway, so it wasn’t a big deal, but I would like to cook things he likes on the weekends and that list is very short. I did make a veggie chili that he is OK with.
My sister is visiting for dinner on Wednesday! I don’t see her often enough. She is a vegetarian (and a veterinarian, actually… which is what I accidentally wrote the first time), so I will be trying out a new recipe on her. Also starting this week we have a new afternoon schedule on Thursdays where we won’t get home until dinner time, so I’m going to need to make those either crock pot nights, or leftovers. I’m looking for a crock pot recipe using either ground beef or stew beef for this week — comment if you have one!
Monday: make-your-own pizza playdate, crudite
Tuesday: chicken and vegetable stir fry, whole wheat egg noodles
Wednesday: Vegetarian bolognese with spaghetti, steamed broccoli
Thursday: HELP! I need a crock pot recipe using stew beef or ground beef
Friday: leftovers (plus cupcakes for a birthday playdate)
Saturday: take out
Sunday: Deep Pan Huevos Rancheros (recipe from the Penzys.com catalog), rice, green salad

Pizza and cupcakes? Can I come to your playdates? Kids here are usually lucky to get goldfish!
Hi Beth, the pizza is a dinner playdate, so I thought having all the boys do the toppings would be a fun activity. The cupcakes are for a very special friend who turns 3 that day. Otherwise, we keep it simple too! — Dara

I have a recipe for beef and bean stew which is good and you can add as many veggies as you want, really. Though the recipe made a pretty big batch. I’d reccomend scaling down the first time to make sure you like it.

You could do taco soup with either the gb or stew meat… you could just put the stew meat, 2 cans of corn or hominy, rotel, chopped tomatoes, a couple cans of beans, and a packet of taco and a package of ranch seasonings. IT’s yummy.

Vegetarian bolognese…very nice. I want to see a picture of that one. I recall bolognese always being the sauce for spaghetti in England (at restaurants and where I worked), so I always ate the spaghetti plain with a bit of grated edam on it! Oh, I don’t miss the food we had there!
