One of my boys’ sweet, dear friends turned 3 today, so I made cupcakes to celebrate at our playdate. The birthday boy is a huge fan of jelly beans and the color blue, hence my kid-centric choice of treats!

I had found instructions online for suspending jelly beans inside the cupcake batter without having them fall to the bottom. (You bake them for a few minutes, insert the jelly beans, and then finish cooking.) But the white cake mix I used was so dense (meringue-like, really, due to the three egg whites rather than whole eggs added to the mix) that I just plopped a few small jelly beans into each muffin cup after I added the batter (pushing them down a bit) and then baked them for the full amount of time.

They turned out a lot less pretty than I expected, honestly. I anticipated a neat, colorful core of candy inside each cupcake, but I wound up with randomly-distributed, somewhat garish lumps of sugar. Regardless, I heard no complaints from our frosting-encrusted kids.
