mpm8 Menu Plan Monday, 3/17   3/23

My boys both have croup. I have been busy with new schedules and PTA stuff. And did I mention the boys have croup? Keeping it simple this week, and using up stuff in my freezer, fridge and pantry.

We tried several new dishes this past week that are keepers: vegetarian Bolognese over pasta, slow cooker stuffed peppers (but oops, my quantities were way off), and a surprise favorite, baked huevos rancheros. I also made chocolate chip banana bread to cheer up my under-the-weather boys.

Monday: chicken soup for my sick honey boys

Tuesday: baked chicken cutlets, Brussels sprouts, challah rolls

Wednesday: J.’s Favorite Goulash, whole wheat egg noodles, broccoli

Thursday: bring in pizza

Friday: leftovers (and we’re making hamantaschen with friends to celebrate Purim!)

Saturday: out to eat?

Sunday: lamb chops? I’m headed up to the butcher to restock my freezer, so something meaty

    I hope your boys feel better soon! (& I feel for YOU-always hard on a mom when the kids are sick). That banana bread would sure cheer me up. :)

    Your food looks amazing. I am glad my dh is asleep because he would be drooling over the lamb chops!

    Hi Dara,

    Your menu looks SO good….yum.

    You left a message on my food blog asking if the portuguese spinach is a particular recipe. I guess so, the way we make ours is with olive oil and garlic and fried….it’s REALLY good, I’ll have the actual recipe up when I make it this week :)

    I like your menu and all, I am just glad to see you are having a few breaks…ordering in, having leftovers and going out once. You likely need a bit of a break right about now!
