I took it easy last week, and it was nice to have a week off. It was even nicer to know what we were eating every night without having to figure it out at the last minute. Planning our dinners on Sunday — something I’ve been doing for a year now, though I started out cooking only two meals a week — has really eliminated the daily stress of “what’s for dinner?” Now, it’s a much, much smaller stress of “when am I going to find the time to shop and cook everything?” And the end result is so much more satisfying.

Just two weeks until Passover now, and I’m moving into use-it-up mode. I’ve got some random stuff to use up in my pantry, like a single can of vegetarian baked beans, lots of oatmeal, and an envelope of onion soup mix. And I’ve still got plenty of pasta, rice, and flour in there as well, but I think we’ll be fine using that up. Once I get those items out of the way I’ll be concentrating on only buying foods that will tide us over until the 19th.

I have two new crock pot recipes to try this week — keep your fingers crossed for me!

Monday: Baked meatballs with peppers, onions, & mushrooms and whole wheat spaghetti, garden salad

Tuesday: Greek Lamb, Artichoke & Onion Stew (crock pot), orzo, peas

Wednesday: leftovers

Thursday: Slow-Cooker Italian Lentil & Vegetable Stew, challah

Friday: leftovers

Saturday: boys at grandparents; J. and I at a friend’s birthday dinner

Sunday: Ropa vieja (leftovers from the freezer), brown rice

    Can’t wait to hear how the greek lamb turns out.

    I feel exactly the same way about the menu planning. Except I have no inspiration this week :(

    I think we must have similar palettes because so many of the recipes you pick out are things I too would enjoy.

    I’m definitely thinking I need to make that lamb crockpot recipe.

    Your mention of ropa vieja does remind me I also was interested in that recipe the first time you posted it as well.
