Menu Plan Monday, 5/5 - 5/11

This past week was uneventful meal-wise. The slow cooker Italian-style turkey meatballs were the definite stand-out because they were easy and delicious. I also liked the chicken & broccoli rabe with whole wheat pasta enough to make it again once I start getting broccoli rabe from our CSA. I had planned on freezing enough meatballs for another night’s dinner, but wound up having barely any leftovers for the best reason of all: more family than I expected stayed to eat, and I had plenty of homemade food to go around. I’d rather have more company to enjoy my food than a packed freezer any day.
Being prepared and able to feed a crowd makes me feel terrific, and I needed some encouragement as I’ve been feeling particularly thwarted by the boys’ refusal to eat any of my food lately. Except for the cookies, of course.
I’m trying a couple of new recipes this week, and I’m most excited about tomorrow’s tofu. Many of the recipe reviews state you should freeze the tofu before breading and baking it, so I’ll do that in the morning. I’m thankful my mom is always up for being a tofu guinea pig!
Monday: Tofu parmigiana with whole wheat spaghetti, garden salad
Tuesday: Sweet potato & black bean burritos (I didn’t get to them over the weekend), rice, salsas
Wednesday: Hot chicken sausage & lentil one-pot (I will need to convert this from metric), challah, broccoli in garlic & oil
Thursday: Bring in pizza & salads
Friday: Either chicken or roasted rolled turkey breast — let me know if you have any tried and true recipes I should try
Saturday: We’re celebrating Mother’s Day with our families early (at lunch), so we’ll have leftovers — I still haven’t planned the menu
Sunday: Order in, and it’s going to be Indian this week since it’s Mother’s Day and I get the only vote!

I was going to do your meatballs this week but when I went to the store, the meat was pretty expensive so I’m saving it for next week … Can’t wait to try it though. We don’t have ground turkey though so I’m going to try it with ground beef. You think it will be ok ?

The tofu parm looks great- but I am the only one in this house who likes tofu.
Chicken Sausage was a huge hit here last week.
Also- I thought your John Mayer comment was hysterical, although I do not like him.

FYI- The spicy asparagus pasta was a huge hit w/J. H is requesting G’s chicken, which is the lemon chicken.
