The Kid-Friendly Meal No One Ate

My household is healthy once more, and that means I’m back in the kitchen. Tonight I made two variations on chicken and broccoli. For the boys, I made oven-baked chicken tenders, steamed broccoli, and corn on the cob. Normally both boys happily eat the corn. A. will usually eat a little broccoli, and G. might have the chicken. Tonight no one ate anything.

The second take on chicken and broccoli was a quick stir fry for my dinner: saute the chicken in canola oil over medium-heat for about 10 minutes, until cooked through. Add a couple of teaspoons of prepared hoisin sauce and a bunch of the steamed broccoli, and toss until everything is coated. You can be sure I ate my meal, even if the boys didn’t eat theirs.

My kids would have loved your kid-friendly dinner! That meal is right up their alley – C loves the broccoli, not the corn, E loves the corn, not the broccoli, and little J (still!) love both. Your stir-fry looks good too — that’s right up my alley!

To both chicken dinners, I say yummy. It was better than my dinner of left-over pasta.

I made this tonight- Monday. H ate more chick then usual, however I am a little embarassed to say I coated it in Captain Crunch.

Dara, how did you cut the corn so perfectly? I always just give my kids the whole cob (which stresses them out a little I think) because if I try to cut it there is corn juice flying all over. I like the cob holders though;o) And, Merrie, I think the Captain Crunch idea is just fine!
I just use my largest chef’s knife and a cutting board. I trim the edges and then usually cut them in half — it usually just takes one swift chop with good hand pressure. — Dara
