Menu Plan Monday, 6/2 - 6/8

June 1st, 2008

This past week was super-slow on the cooking front. A construction project kept me from the butcher, so I didn’t get to the Chicken Scarpariello. But I’m looking forward to it tomorrow. I find that the less I cook due to circumstance, the less I want to cook. It’s not a good cycle. Unfortunately, there’s not too much cooking to do this week either, since one or more of us are not home for several dinners this week.

What I really need to do is start brainstorming some warmer-weather recipes. The Broccoli Slaw & Chicken Wraps are a great start — they were easy, delicious, and FAST! Even though it’s supposed to be in the high 70s this week, I chose rather wintery meals. What do you cook when it’s warm outside? Maybe I need to finally learn to grill this summer.

Finally, our first farm share pick-up of the season is this Wednesday! I can’t wait to see what we get.

Monday: Chicken Scarpariello, spaghetti, broccoli (bumped from last week)

Tuesday: Boys go out with my MIL; we’re at a benefit dinner

Wednesday: Boys have yogurt, challah, fruit (quick meal after a late playdate and farm share pick-up); defrost sweet potato & black bean burritos for J.; I’m out to dinner with friends

Thursday: Slow Cooker Stuffed Peppers, farfalle pasta, veggies from farm share

Friday: Roasted chicken, veggies from farm share, Israeli couscous

Saturday: We’re throwing a lunch barbecue here (menu TBD), so leftovers or take out

Sunday: Date night with J., boys sleep out!

    It’s supposed to be in the high 60s and low 70s here on the coast this week, and we are grilling, grilling and more grilling (we also don’t have AC, so I try to keep it cool inside when it’s warm outside). I only have one “wintry” meal this week and I’m already questioning it! :)

    Normally during the week we make extra of any protein we’re grilling for lunch and for leftovers. I also normally make a big batch of a legume (often black beans) and a grain (often brown rice if we have leftovers, couscous if we ran out! I’m going to begin experimenting with others - including quinoa!) and keep them in the fridge and often make a quick “salad” of cold legumes, grains, a leftover protein and some veggies with a homemade vinaigrette for at least one dinner and often a few lunches during the week. Depending on how I make the vinaigrette and what veggies I use, it could be seasoned Asian, Italian, or even smoky barbecued. This week it’s Southwestern.

    Yummy menu! I cook about the same things all year ’round, and my husband will even grill in the winter, so I guess I can’t help with that question. Have a great week!

    Sounds yummy. farm share sounds neat. If I lived in a more urban area I would be interested! Thankfully we are able to grow our own, just wish we could have animals.

    I too am struggling with warm weather foods. I was trying to be original this week and kept coming up with baked things… not great for already warm temps!

    I have exactly the same issue with cooking in the warmer weather! Grilling does not really work for me on a week night with the kids under foot and the husbands return time unpredictable.

    I try to go with things that are quick or pasta/rice salads that can be eaten cold or at room temp. I am definitely in need of some new “favorites” for summer.

    I just learned how to grill last year. Now I love it; there are a lot of different tastes that can be created! When it’s hot I like to use my crock pot because it doesn’t heat anything up. That, or just a very small dish in the toaster oven for the same reason.
