Sweet Sesame Cabbage & Radish Slaw

I received an arrowhead cabbage and a beautiful bunch of red radishes from my CSA this week, and this was a perfect way to use them. I marinated the slaw in a Ziploc bag in my fridge overnight — there is plenty of extra dressing (plus the liquid the vegetables give off) so serve it with a slotted spoon.

Because there’s no mayo, this is a perfect slaw to bring to a potluck or barbecue over the summer — it can handle sitting out on a picnic table for a while.

I served this side dish with Glazed Beef Kebobs with Onions, Red Pepper & Pineapple and Bob’s Cold Sesame Noodles — an awesome summer trio.

Sweet Sesame Cabbage & Radish Slaw
Inspired by Asian Cabbage Salad

2/3 c. apple cider vinegar
2 Tbsp. toasted sesame oil
1 Tbsp. grated ginger (bottled is fine)
1-2 Tbsp. honey
1 arrowhead cabbage, shredded
1 bunch (6-12) radishes, slivered
4 green onions, minced (use the whole onion)

In a large bowl, whisk together vinegar, sesame oil, ginger, and 1 Tbsp. of honey. Taste and add more honey if you prefer it sweeter. Add cabbage, radishes, and onions to the bowl, toss until well-coated. Refrigerate overnight before serving; good cold or at room temperature.

    Dara, what’s an “arrowhead” cabbage, and could I substitute regular white cabbage for it?

    Yes sure, any cabbage would be fine. An arrowhead cabbage looks like this. An arrowhead is not very large and is fairly tender and mild, plus it is less dense than a bowling-ball type white cabbage. — Dara
