Menu Plan Monday, 12/1 – 12/7

Better late with a plan than never!

Our Thanksgiving was wonderful, except that I need to make a concerted effort to spend more time out of the kitchen and hanging out with my family next year. The Brussels Sprouts with Chestnuts & Dried Cranberries were probably the biggest success out of the dishes I cooked, though overall I didn’t feel the food I made was my best ever. It was fine though, and the turkey came out perfectly (J.’s doing).

It’s hard to believe it’s December already. Such a busy month! There have been so many things I’ve pushed off to “after Thanksgiving” and now here we are. Hope you had a great holiday, too.

Monday: Chicken sausage and onions, pasta, grape tomatoes

Tuesday: Baked Tofu in Almond & Cilantro Sauce, whole wheat spaghetti

Wednesday: Winter Lentil Soup (from the freezer), hard-boiled eggs, challah rolls

Thursday: Neil Sedaka’s Chicken, farm share veggies, egg noodles

Friday: Roasted chicken, farm share veggies, challah

Saturday: Out to dinner?

Sunday: Baked Ziti (I make a meatless version), salad, Italian bread

I love that you make a weekly meal plan!

I’ve been trying to get in the habit of doing one, myself, but I can never seem to get motivated…

    Thanks for the inspiration!

Cheesy Kale Crisps: We rarely eat kale now that our farm share is over, and I want to fix that. I've wanted to try using nutritional yeast, and this recipe looks like a tasty way to do it.

"Shake It Out" by Florence + the Machine. This song reminds me of Annie Lennox, and I love tracks that include a huge, gospel-like chorus.
