Baked Tofu in Almond & Cilantro Sauce, Revised

I’m making all tried-and-true recipes this week, and my Baked Tofu in Almond & Cilantro Sauce did not disappoint. My mom and I love it! A. gagged down a single pea, but otherwise enjoyed the udon noodles I served with it. G. stuck with his trusty applesauce. I love how he’s rejecting plain noodles now. What’s next? No water?
I made a couple of changes to the dish this time around. First, I baked it for a longer period, about an hour, and stirred it a few times while it baked so more of the cauliflower had a chance to brown. I liked it better this way — the cauliflower was more tender and the sauce was thicker. To help the color I bit, I didn’t add the cilantro until after it came out of the oven. Unfortunately, I think some flavor was lost without the cilantro cooking in the sauce, and the color was not much improved. Next time I might try adding the peas at the last minute instead, just to keep some green in there.
I put some udon in a bowl, sprinkled on a little soy sauce, and then topped it with the tofu. The extra saltiness of the soy sauce perked up the flavor, and I like the contrast of the smooth noodles against the rough cauliflower. This is definitely the way to eat it, better than over rice.

Your G. must’ve whispered in my little J’s ear because he is almost completely off food these days. Although he ate oatmeal for dinner…yum?

A gagged down a single pea. He is such a trooper to try! I still adore G’s persistence…sticking to his guns about the food he eats. Though it drives you crazy now…it may serve him well one day;)
