Menu Plan Monday, 12/8 – 12/14

I stuck to tried and true recipes this week, and was really happy I did. Everything turned out well — even better than I’d remembered — and it’s always easier to cook something a second or third time than the first attempt at a new recipe.
My mom and I loved the Baked Tofu in Almond & Cilantro Sauce, served over udon noodles. I’m a little tired of the Winter Lentil Soup at this point, but there’s still one last quart in my freezer for another week.
Neil Sedaka’s Chicken was incredible — we (me plus J.’s mom and grandma) were practically licking the pan clean (G. ate the drumsticks, which I cooked without sauce). I put all the onions under the chicken this time, and removed the skin before cooking so that the sauce would really flavor the chicken and not be removed before we ate. I also cooked it for about an hour and 10 minutes at 375°. Perfect. We ate every last bit of onion too.
Then this weekend J. made his Poppy’s Borscht (using our farm share beets and potatoes), and I made my Baked Ziti. Lots of comfort food, lots of satisfied family.
Monday: Leftover Baked Ziti, rolls, carrot sticks
Tuesday: Sauteed chicken breasts, frizzled red cabbage, mashed celeriac
Wednesday: Make-Your-Own Pizza (buy the dough)
Thursday: Saffron Chicken, roasted parsnips and butternut squash, whole wheat egg noodles
Friday: Baked chicken drum sticks, Broccoli Pancakes, challah
Saturday: At a party
Sunday: Take out
