Menu Plan Monday, 1/12 – 1/18
January 11, 2009
This past week started off poorly, when I forgot I had eggs hard-boiling on the stove. All the water in the pot evaporated and the shells of the eggs had started to burn by the time I remembered they were there. Whoops!
The rest of the week made up for it. Southwestern Chicken & Vegetable Soup didn’t disappoint. Skillet Gnocchi with Spinach & White Beans was the standout of the week, a recipe I’ll return to again and again. The crock pot rotisserie chicken couldn’t be easier, and we capped off the week with Chocolate Oreo Birthday Cake.
I may make a batch of pumpkin muffins this week, as well.
Monday: Chicken sausage with whole wheat spaghetti, steam broccoli
Tuesday: Mulligatawny with Chickpeas (from body + soul magazine, recipe is not online yet), curried cauliflower, brown basmati rice
Wednesday: Leftovers
Thursday: Lemon Chicken with Olives, whole wheat egg noodles, sauteed green beans
Friday: Roasted chicken drumsticks, edamame, challah
Saturday: Breakfast for dinner: Man in the Moon eggs and cut-up fruit
Sunday: Go out or order in

The lemon chicken was good. I’m curious if remembering the cumin adds much to the recipe, so I’m eagerly awaiting your verdict
Also the mulligatawny sounds good. Hey, why don’t I just eat at your house this week, LOL!

What are “man in the moon” eggs? Is it like toad in the hole…which I just googled and found it listed mainly as the British dish, which is not at all what I mean…I mean what they are calling “egg in a basket” among other things….

Yep, that’s it exactly. J.’s family calls them “man in a boat.” I grew up with them as “man in the moon.” Another friend of ours calls them “gas house eggs.” They’re all yummy! — Dara

Bummer ’bout the eggs. I’ve done the same thing with rice. Major pain to clean the pot!
The Skillet Gnocchi looks divine…it is a shame I am the only one who would eat it.
