Menu Plan Monday, 1/19 – 1/25

We struggled with two cases of pink eye (both boys), a double ear infection with a bad cold (mine), and sort of some respiratory virus (J. — still in the middle of it) this week. I was feeling very poorly until Thursday, so I stuck to the basics when it came to meals. Pasta, yogurt, mac & cheese from a box. It should be noted that no one in my family minded!
This week’s meal plan is nearly identical to last week’s. I made some hummus this afternoon to go along with falafel and pita, and already felt better getting back into meal prep.
Monday: J.’s Favorite Goulash (crock pot), Israeli couscous with sauteed onions, Brussels sprouts
Tuesday: Mulligatawny with Chickpeas (from body + soul magazine, This Beloved Life posted it online), leftover hummus, toasted pita triangles
Wednesday: Leftovers
Thursday: Lemon Chicken with Olives, whole wheat egg noodles, sauteed green beans
Friday: Roasted chicken pieces (pretzel coated?), edamame, challah
Saturday: J.’s taking me out for my birthday dinner!
Sunday: Triple Tomato Sauce with Ziti, garden salad
