Menu Plan Monday, 2/2 – 2/8

I had fun making hearty, simple dinners last week — like a warm blanket on a cold night. Nothing required a recipe, which was a nice change — even though I really enjoy trying new dishes it’s refreshing to sometimes cook by just throwing stuff together.

This week, I asked the boys to each choose a meal they’d like me to make. A. asked for Wacky Mac, which is plain pasta but all different shapes and colors (from vegetables) in one bag. G. finds the Wacky Mac to be a bit out of his comfort zone (too many shapes! too much color!) so he requested “plain, regular pasta” (penne). Notice neither of them actually want me to cook, just boil water.

I’m going to make a batch of Pumpkin Chocolate Chip Muffins with flax this week as well.

Monday: Baked Meatballs (from freezer), Wacky Mac, salad

Tuesday: Spinach Burritos with Salsa Verde, brown rice

Wednesday: Whole wheat penne with ricotta cheese, steamed broccoli

Thursday: Chicken with Mushrooms and Peas, Black Bean Cakes

Friday: Leftovers, challah

Saturday: Take out or go out

Sunday: Ropa Vieja (crock pot), egg noddles or rice

    I actually meal planned this week as well and I have 2 of the same meals!
    I am making your meatballs (w/wheat germ) and the chicken w/peas and mushrooms from RR as well.
    BTW, the other nights are Chicken Castillo, Polenta lasagna, and chicken sausage, peppers, onions and potato skillet.
    Clearly I like your menu:)

    That’s very cool. I have always wanted to try a polenta lasagna, but J. has nixed it and I know the boys won’t eat it. Please let me know how it turns out! Oh, and I like the idea of adding potatoes to the sausage and peppers. Maybe I’ll just eat at your house this week… — Dara

    Polenta lasagna was fabulous. So was everything I made this week. I ended up making a meatloaf instead of doing sausage and peppers due to a meat mix-up. However, I’ll just make it next week. How did your chicken w/mushrooms and peas turn out? I really enjoyed mine.
