Menu Plan Monday, 2/16 – 2/22

The second half of last week’s plan fell apart because I was sick with strep and another ear infection. Have I mentioned how much I’m looking forward to spring this year? I can’t seem to catch a break this winter, picking up every illness that rolls through. Thankfully the boys were fine.

Both the boy are off this week, so our schedule is more fluid than usual. I kicked off the week yesterday with a yummy batch of banana muffins and hope to bake some cookies as an activity this week, as well.

I’m feeling the urge to start using up random food that’s been languishing in my freezer and pantry, so I’m going to repeat some of the items I missed last week and use leftovers, too.

Tuesday: Soba, Tofu, and Vegetable Stir-Fry

Wednesday: Ropa Vieja (from the freezer), rice, steamed green beans

Thursday: Slow Cooker Ratatouille with whole wheat spaghetti, Parmesan cheese

Friday: Roasted drumsticks, spaghetti squash with sauce on the side, challah

Saturday: Go out or take out

Sunday: Roasted antipasto mix (from freezer), whole wheat pasta, fresh mozzarella

    I’m so sorry you were ill! I hope everyone is feeling better. We took our vacation last week, so we are back at school this week here.
