Breakfast for Dinner

090225veggieeggs Breakfast for Dinner

Sauteed onion, pepper and tomato mixed into some scrambled eggs, served over a toasted bagel. I think eggs should be dinner more often!

The boys may look like they can’t keep their hands off my plate, but they were much more interested in the carbs than the protein or veggies.

    When I was single I used to make myself veggie scrambled eggs for dinner all the time. I wish I could get away with that with my kids! It’s bad enough in their eyes that I make them eat eggs many mornings before school!! Cute picture :)

    The nutritionist was a big fan of eggs for dinner, as we were always in need of quick dinners.

    Tonight I learned how to poach eggs! I enjoy them a lot.

    Eggs for dinner are a favorite of mine. A mexican inspired egg burrito may be on tap for tonight’s dinner.
