This is my go-to Baked Ziti recipe, though I did double the sauce this time and I actually liked it better. My original recipe creates more of a sliceable, casserole-type dish, while using 2 jars of sauce (about 6 cups) still lets the noodles hold together, but it’s more gooey and spoonable. I steamed the green beans, and seasoned them with a small amount of olive oil and salt.

My boys have never, ever eaten any kind of pasta mixed with sauce. I keep trying, though. I presented this meal as being like a “pizza pasta” — the sauce and the cheese are the same as what we put on our Boboli pizza Monday night. This explanation struck a chord with G., who surprised me by digging right in, proclaiming it delicious, and asking for more. I was really thrilled!

A. didn’t even want to taste the ziti, but not to be outdone he also shocked me by asking for the green beans instead. And then having multiple servings.

I liked the food too, but really there is no greater feeling for a cook or a mom than having your kids enjoy what you made for them.

Good things seem to be happening! Between A’s eating the Indian food and both boys enjoying this meal, you’re on the right track!

[...] I cooked some yummy dishes that aren’t all that great looking, but I love them anyway. My Baked Ziti and green beans dinner was an unexpected success, because G. actually loved it (it was the first time he’d eaten [...]

Cheesy Kale Crisps: We rarely eat kale now that our farm share is over, and I want to fix that. I've wanted to try using nutritional yeast, and this recipe looks like a tasty way to do it.

"Shake It Out" by Florence + the Machine. This song reminds me of Annie Lennox, and I love tracks that include a huge, gospel-like chorus.
