Menu Plan Monday, 4/13 – 4/19

We’re in the middle of Passover, so my menu plan through Thursday evening reflects that — no bread. At this point last year I was starting to find the food restrictions for the holiday a drag; not for me but for the boys. This year we seem to be OK so far, and I haven’t even broken out the potato starch-based pasta yet (blech). I am very thankful the boys are happy eating matzah!
Monday: Egg salad, sliced tomatoes, and cucumbers with Passover rolls
Tuesday: Savory Noodle Kugel, tomato & artichoke salad, birthday cake for my mom and sister!
Wednesday: Roasted chicken drumsticks, couscous (a kosher for Passover version), broccoli
Thursday: Passover ends tonight! Order in pizza
Friday: Spinach & Turkey Meatballs, whole wheat spaghetti, challah
Saturday: Leftovers
Sunday: Dimer Dalna (egg curry with potatoes, shallots, and peas), rice, naan

I just looked at your recipe for Passover rolls – and I’m so glad someone else knows what they are! (Although we call them popovers in my family)… That’s the one thing that’s missing during my Passover at school this year, and no one knew what they were! But the rest of your meals look great – much better than the one’s I’ve been eating at my Hillel (especially tomorrow night’s dinner, yum!)… and I’m so excited to order pizza to break Passover, also. You should check out springpad’s weekly meal planner – it’s a great way to organize all of your menus and recipes, I think you’d really like it!

Good news about the Passover rolls… stale, they make a great addition to onion soup that works so nicely for Passover, even if not served in traditional crocks.
