Menu Plan Monday, 4/20 – 4/26

April 19, 2009

Passover ended this past Thursday, and although I stocked our pantry with a lot more leavened junk than usual (hello, Oreos), I haven’t gotten back into the swing of cooking. That’s going to change tonight, when I make an egg curry for dinner. Hopefully it will set me off on the right foot for the week. As a creature of habit, I’m always happy to get back into our daily routine.

Monday: Leftovers

Tuesday: Baked Egg Rolls, stir-fried string beans, rice

Wednesday: Leftovers

Thursday: Mrs. Jones’ Macaroni & Cheese, garden salad

Friday: Dinner out in the city (pizza for the boys?)

Saturday: Orange-Hoisin Short Ribs (crock pot), sauteed spinach, rice

Sunday: Order in

Great menu. The orange-hoisin short ribs sound really good! Thanks!

Want to Try

Peanut Butter Baked Oatmeal: I often swirl a tablespoon of peanut butter into my bowl of oatmeal at breakfast; this is a make-ahead version that I could portion and freeze.

Cook to This

"A Hazy Shade of Winter" by Simon & Garfunkel. I heard this on the radio recently and was shocked to realized I'd forgotten The Bangles' version is a cover of this original.
