I am feeling uninspired with the meal planning. Although G. enthusiastically received last night’s chicken, and A. didn’t mind eating a bite or two either, I’m otherwise feeling like I’m in a rut where everything I want to prepare is something no one else will eat. Plus, we’ve been having such warm weather that the last thing I want to do is come inside and cook! It’s supposed to go up to 86° F today, which is crazy for April.
I blame myself for part of the boys’ not wanting to eat much dinner lately. I’ve gotten lax about allowing snacks or milk late in the day (and often it’s me doing the offering, rather than them asking), and I know it’s interfering with their hunger once dinner time rolls around. So I need to get back to both not offering a snack if they don’t ask for one, and also being firm that dinner is just an hour or so away, and they can eat then.
A batch of Chocolate Chip Banana Muffins went into the oven first thing this morning — my bananas were about to become compost, and I wanted to get the oven off before the day started heating up. I threw a half cup of dessicated coconut in with the batter, and it smelled delicious and tropical. I may do some sort of coconut-breaded chicken to use up the last of the coconut I have in my pantry from the Macaroon Cake.
Monday: One-pan meal in the toaster oven (we had a hot day, in the mid-80s!): Brussels sprouts and chicken drumsticks
Tuesday: Take out or go out
Wednesday: Bagels, hard boiled eggs/egg salad, carrot & celery Jenga
Thursday: Pan-Fried Gnocchi with Mushrooms & Brussels Sprouts
(made pareve), roasted chicken pieces
Saturday: Order in
Sunday: Grilled steaks & asparagus, Quinoa with Mushrooms & Onions
