greenmpm Menu Plan Monday, 5/4   5/10

Last week was simple: Dijon Egg Salad, Kickin’ Honey Mustard Chicken, Pan-Fried Gnocchi with Mushrooms & Brussels Sprouts. Comfort foods, now that I think about it. I ended the week by baking Neiman Marcus Chocolate Chip Cookies — yum!

Even though I was more aware about not giving late-afternoon snacks this week, the boys are still not really eating dinner and don’t seem to care, so while I figure that one out I’m going to be boring with my menu choices. I can’t wait to be inspired by my farm share, which starts again next month!

Monday: Leftovers

Tuesday: Spaghetti and meatballs, steamed broccoli (I’m out to dinner with PW!)

Wednesday: Grilled cheese sandwiches, fruit salad

Thursday: Lemon-Roasted Chicken (with chicken breasts this time), sauteed green beans, challah

Friday: Baked chicken drumsticks, edamame, challah

Saturday: Order in or go out

Sunday: Mother’s Day! Our family will be here for lunch: sangria, skirt steak on the grill, tortilla chips, tomato & avocado salad. I am not planning dinner.
