Menu Plan Monday, 5/11 – 5/17

My Mother’s Day was fantastic, and I hope yours was too. J. made sangria (I’ll post the recipe tomorrow), guacamole and tortilla chips, skewers of marinated zucchini and red pearl onions, and skirt steak marinated in a cilantro chimichurri sauce. It was one of the best grilled meals we’ve had in a long time, and that’s saying something because pretty much everything J. grills turns out delicious. I love having my family over to eat, play, and just be together. I feel very lucky and loved.
Because I was having some minor work done in my kitchen this past week, there was very little cooking going on. Instead, I did get a chance to talk a little about packing school lunches: what do you pack for your kids’ lunch?
Monday: Grilled mozzarella sandwiches, carrots & celery
Tuesday: Dimer Dalna (Egg Curry), Basmati rice
Wednesday: Chicken Scarpariello, whole wheat spaghetti, sauteed spinach
Thursday: Montalcino Chicken with Figs and Buttered Gnocchi, roasted asparagus
Friday: Leftovers, challah
Saturday: Order in or go out
Sunday: Triple Tomato Sauce with Ziti, garden salad

If you’re willing to share the chimichurri sauce recipe, I’m very interested! Last summer at a restaurant I had veal cheeks with a chimichurri sauce and looooved it. Also, I’d like to know what adaptations you make to the Chicken Scarpariello. I need to play around with that recipe sometime, too.
I think J. made up the marinade, but I’ll ask him what was in it. If I recall, a lot of cilantro, honey, chopped garlic, and onions. He considered reserving some of it to use as a condiment, but we wound up putting it all on the steak as a marinade instead. I know I’m going to tone down the heat on the chicken, that’s for sure! — Dara
