Menu Plan Monday, 5/18 – 5/24

I didn’t get to everything I planned last week, but what I did make was delicious. I made a second pass at Chicken Scarpariello, and liked the outcome. It’s still more spicy a chicken dish than I’d make regularly, though; I’ll save my hot peppers for beef or vegetarian meals, since J. is the guy who most appreciates the heat. Chicken and Figs was easy, different, and very yummy. I’m glad to have found this recipe. Both dishes, by the way, were based on Rachael Ray recipes — I usually have good luck with her meals.
If you missed it earlier in the week, make sure to check out Susanna’s Sangria — it makes a lot, but it is a great accompaniment to a spring or summer barbecue.
I can’t plan to grocery shop on Sundays, it just never works out. Tonight was no exception — I didn’t get to the store, and so we brought in Japanese instead. This week I’m going to make sure I have the ingredients for our Sunday dinner before the weekend begins. Have a good one!
Monday: Coconut oven-fried chicken (I’m making this up — I have leftover dessicated coconut I want to use), red pepper slices, dinner rolls
Tuesday: Dimer Dalna (Egg Curry), Basmati rice, naan (bumped from last week)
Wednesday: Turkey burger sliders with lettuce, tomato, & pickles, pretzels
Thursday: Leftovers or Annie’s mac & cheese
Friday: Roasted chicken, edamame, challah
Saturday: Order in or go out
Sunday: Triple Tomato Sauce with Ziti, garlic bread, garden salad (bumped from last week)
