Menu Plan Monday, 6/1 – 6/7

I had to tear myself away from Twilight to finally write up the menu that’s been set in my head for a couple of days…
Last week was unusual in that I didn’t deviate from my Menu Plan Monday post at all — I can’t remember the last time that happened! The Slow Cooker Ratatouille was really delicious again, and it’s cool to see the mounds of fresh vegetables that go into it. It’s so yummy and yet incredibly healthy, too.
Our barbecue on Sunday was terrific — dear friends and their kids. All six of the children are finally at the age where they need minimal parental intervention as they run amok in the yard, leaving us plenty of time for adult conversation. J. smoked a brisket on the grill for the first time, which turned out great. (I’m going to ask him to try beef ribs next.) He also grilled some chicken, and we served Basil Green Beans with Tomatoes and Mustard Vinaigrette Potato Salad, which we added some lemon zest too (I liked it better with the lemon, J. didn’t). Our friends brought homemade ice cream (Mexican hot chocolate, buttermilk chocolate, and cherry-vanilla chocolate chip) and mini cupcakes from Crumbs Bake Shop. The weather was perfect and I can’t think of a more pleasant way to spend a Sunday.
We have plenty of leftover chicken from Sunday, so that’s featuring into Monday and Tuesday this week.
Monday: Leftover grilled chicken, sugar snap peas, egg noodles
Tuesday: Leftover grilled chicken, sauteed peppers & onions, pasta or rice
Wednesday: Bagels and egg salad, sliced tomatoes, baby carrots
Thursday: Balsamic Red Onion and Tomato Chicken, roasted green veggie, whole wheat pasta
Friday: Breakfast for dinner: Silver Dollar Pancakes and fresh berries
Saturday: Sweet Potato & Black Bean Burritos, rice, salsa & sour cream
Sunday: Take out

I am also featuring leftovers, bagels and breakfast for dinner! With my bagels I am adding cold cuts:)
