Menu Plan Monday, 6/8 – 6/14

Our first farm share pick up is this Wednesday! We’ve been told we can expect salad mix, red leaf head lettuce, radishes, turnips, broccoli rabe, cooking greens, sorrel, parsley, and cilantro. I’m planning on using the broccoli rabe and greens in the Baked Lemon Pasta on Thursday; I’ll mash the turnips along with baked chicken on Friday. I’ve felt like I’ve been in a slump cooking-wise, so I am looking forward to this season’s CSA veggies inspiring me.

Monday: Sweet Potato & Black Bean Burritos, rice, salsa & sour cream (carried over from last week); quesadillas for the boys

Tuesday: Asian Lettuce Cups with Spicy Ground Turkey Filling, rice, steamed broccoli

Wednesday: Bagels and egg salad, sliced tomatoes, baby carrots (carried over from last week)

Thursday: Baked Lemon Pasta (with broccoli rabe and sauteed greens added), salad, whole wheat baguettes

Friday: Roasted chicken drumsticks, mashed turnips, challah

Saturday: J.’s grilling something delicious, I just don’t know what yet

Sunday: Take out
