Menu Plan Monday, 6/15 – 6/21

I was thrown off this past week by a bunch of different issues, and I am really thrilled to be saying goodbye to last week and hello to this one. I was able to tap into my freezer stash for a couple of meals instead of cooking, and that always makes me want to pat myself on the back. The Slow Cooker Coq Au Vin was even better reheated — I had removed the chicken from (most of!) the bone and shredded it into the sauce before freezing. Served over noodles, it was delicious comfort food during a difficult few days.

Our first farm share pick up was this past Wednesday, and our cooking over the weekend reflected that bounty. We made a Sesame Radish Salad; Kalamata, Apple, Bleu Cheese & Tomato Chopped Salad; and Broccoli Rabe & Potato Salad. It was not all salads this weekend, though. J. smoked beef ribs as a counterpoint to all those veggies, and they were fabulous.

Some good variety in this week’s menu, I’m looking forward to it. I haven’t baked in a while, so I think some oatmeal chocolate chip cookies are also in order for this week.

Monday: Beef franks & Mashed Turnips (a weird twist on bangers and mash), steamed carrots

Tuesday: Spinach Stew (a Joan Nathan recipe from my friend Rachel), whole wheat couscous (I’m going to give the kids a “pick from the fridge” option)

Wednesday: Spaghetti and meatballs, broccoli

Thursday: Baked Teriyaki chicken (using Merrie’s fave, Soy Vay), farm share veggies, egg noodles

Friday: Punjabi Chhole (Indian chickpeas using an Arora Creations spice mix), Basmati rice, farm share veggies

Saturday: Take out

Sunday: Bagels & appetizing for Father’s Day lunch; leftovers for dinner

    Looks great. Want to try the chickpea dish! Soy Vay is huge here, especially with panko breadcrumbs:)

Back Bay Cookies: I was cleaning out my pantry this week and found a bag of roasted, peeled chestnuts. I'm going to sub chocolate chips for the golden raisins and make these for the boys.
