Insalata Caprese with Avocado

Last night I made a salad platter, layering sliced tomatoes, basil, and fresh mozzarella (insalata Caprese) around the edge, with an avocado in the middle. We dressed our own servings with balsamic vinegar and olive oil, and ate it with slices of ciabatta bread. This is a perfect summer meal — quick, cool, and light. I plan on making it often this summer.

    Ok that has just become my favorite salad – what a simple yet incredible combination.. DAMN why didnt I think of this!!

    This is my all time favorite salad. I never tire of it. In fact I put it on my menu for this weekend!

    Did we have a salad something like this at ASK pizza in the U.K.?? Why do I remember that!? It was the colours of the flag of Italy or something. Funny that a pizza place seemed fancy for us back then!!

    Oh yeah, that was a date night restaurant for us! They totally had a salad like this, I’d forgotten. I remember asking for a “tomayto” salad and they made fun of my pronunciation — “did you mean tomahto?” — Dara
