Menu Plan Monday, 7/13 – 7/19

I loved last week’s meal plan — lots of veggies, super-easy prep. It made it very easy to stick with the plan and best of all, it was all delicious. I’m aiming for a similar result this week.
I tried my hand at making pesto this week, throwing some parsley in with the basil, Parmesan, garlic, pine nuts, and olive oil. Too much garlic, though, but it was still good.
I am going to try an experiment tomorrow: banana & zucchini muffins (with chocolate chips, natch). Should be good!
Monday: Crunchy Peanut Slaw, udon noodles
Tuesday: Leftover slaw, roasted chicken drumsticks, rolls
Wednesday: Slow Cooker Ratatouille (from the freezer), whole wheat spaghetti, mozzarella cheese
Thursday: Out to dinner
Friday: Pasta with sauteed greens or other farm share veggies
Saturday: Baked Ziti, garden salad, garlic bread
Sunday: Take out

A friend of ours here made a sundried tomato pesto with almonds, mixed it with some cream cheese & it was so good…it ended up being eaten off of homemade focaccia bread…which was very good.

The roasted chicken and challah (and carrots) were a huge hit here! My kids could not wait to tell Maria about their fabulous dinner and how much they liked it.
By the way the salad was amazing!
