Pan-Fried Gnocchi with Swiss Chard & Onions

My parents bring me Vantia-brand shelf-stable whole wheat gnocchi whenever they make a trip down to Arthur Avenue. It’s so delicious, I could eat it every day. Tonight I drizzled some olive oil in a large skillet and sauteed an onion (finely sliced) and the swiss chard (roughly chopped) from my farm share. I removed them from the pan, wiped it out, and then drizzled a little more olive oil. The gnocchi went in straight from the package, and cooked over medium-high heat until they were browned on all sides. Then I added the swiss chard back in, seasoned it with some salt, and made sure it was all well-combined. Served it with some rib eyes that J. grilled. We were both exhausted this evening, but this meal was so much better — and faster, even — than anything we could have ordered in.

If I get a chance I will have to hunt down that gnocchi. The ones from Trader Joes are like little musket balls of mashed potato.
I’ve been looking for something to do with my beet greens, maybe I’ll try this out with that.

I love swisschard and garlic w/gnocchi! I never thought to pan fry the gnocchi, though. Looks delicious.
