CSA Share ‘09, Week 9

Despite the crazy flooding Kinderhook, NY received last week (look at these poor cows! and canoeing in the middle of a field!), we got a well-rounded batch of vegetables this week. We were warned ahead of time that there would be no chard or lettuce this week due to flooding, but the beet greens are so lovely I’ll hardly miss the chard. I’m impressed they were able to get what they did to us.
We received: a kabocha squash, 2 bell peppers, 2 Carmen peppers, basil, a quart of green beans, an eggplant (with really sharp thorns on its cap!), a nice bunch of beets with greens attached, 4 ears of corn, 1 bulb of garlic, a small summer squash, a cucumber, and — best of all — a beefsteak tomato.
Last August I tried unsuccessfully to sub a kabocha squash for the sweet potatoes in my Sweet Potato & Black Bean Burritos. This time I’m trying a different tactic — I’m making a sweet and spicy roasted kabocha squash to serve with whatever J. grills on Sunday.
I am also tempted to try Magpie’s Guerrilla Mock Caponata with my eggplant — she is a Roxbury Farm CSA member, too. If not that, some more Slow Cooker Ratatouille, which I can’t get enough of.

Cannot get enough of the ratatouille either:)

The reason I made the caponata was because I was tired of ratatouille – and I didn’t have any tomatoes yet. I wanted something a little denser and less watery – and I really liked the result.
I feel strangely disconnected from the CSA this year – my husband is not working right now, so he’s been doing all the CSA pickups, and most of the dinner cooking. I just eat it!
