Menu Plan Monday, 9/7 – 9/13

School starts on Tuesday for A. — back to packing lunches for me. Now a big first grader, A.’s tastes are pretty much the same since I wrote Packing Lunch for Kindergarten. He has no problem eating the same couple of main items over and over, so it’s not too much of a chore. He originally requested a yogurt drink and a bagel with butter for his first lunch, but then told me to surprise him, since he actually wants to eat that combo for breakfast. I’ll probably pack leftover pasta with Parmesan, or mac and cheese (both in a Thermos), because those are his favorites.
J. got a smoker this weekend, so to break it in he made me some beef ribs (yes, my request!). They were incredible, again (last time he made them on the grill). I see a smokey future for us — turkey, chicken, brisket, salmon and more. Oh my!
We’ll be low key this week while we get into our fall schedule.
Monday: Labor Day. We’ve already done the cookout thing this weekend, so I’m going to play it by ear. Maybe Sweet Potato & Black Bean Burritos from the freezer
Tuesday: Bok choy, red pepper, and Tom Sim stir fry, whole wheat spaghetti (plus I’m going to make M&M cookies as a treat for A.’s first day)
Wednesday: Roasted delicata squash with homemade tomato sauce (from the freezer) and ricotta salata, dinner rolls on the side
Thursday: Chicken and Figs, egg noodles, farm share veggies
Friday: Leftovers, everyone’s schedule is different tonight
Saturday: Order in
Sunday: J. grills, farm share veggies
