Menu Plan Monday, 10/19 – 10/25

We took the boys to Cloudy with a Chance of Meatballs today, which they loved — it was G.’s first time seeing a movie in a theater (not counting a failed attempt at sitting through an IMAX). And other than his total meltdown as we left because we said we’d make popcorn at home rather than buying it at the concession stand, it was fun for me and J. to see the movie with them. Our first movie as a family! I hope to do it again soon.

The movie put spaghetti on my mind, and so I’m kicking off the week with two days of pasta. Also, eggs were buy a dozen, get a dozen free last week at my supermarket, so Baked Huevos Rancheros seemed a good way to use them up. I’ll probably make some hard-boiled eggs for lunch, too.

Monday: Whole wheat pasta with broccoli rabe & red peppers sauteed in olive oil and garlic, Parmesan cheese

Tuesday: Pasta with Lentils and Arugula (bumped from last week)

Wednesday: Acorn squash stuffed with couscous and veggies

Thursday: Baked Huevos Rancheros, rice, garden salad

Friday: Chicken Soup with noodles, edamame, challah

Saturday: J. grills or order in

Sunday: Spinach lasagna or stuffed shells, Italian bread, steamed broccoli & garlic (these meals have been bumped from week to week for months)

    I just checked out your chicken soup recipe – I always do just in case there is a new trick…

    The only cooking difference beween our recipes is that I use chicken wings in stead of a whole chicken. I find that the bones give the flavor & there is a whole lot more bone ratio in the wings. (They also tend to be cheaper at Kosher Mart.)

    Amy, I’ve never made it with wings but I have done it with a package of chicken necks! You’re right, it makes good soup. Also very cheap from my kosher butcher. However, I like having all the soup chicken leftover for other dishes so using a whole pullet chicken works for me. — Dara

    Love Huevos Rancheros, but then again, I’m from Texas! And I’m new to Acorn Squash…I just cooked it for the first time a few weeks ago. The couscous and veggie stuffing sounds yummy!
