Love Huevos Rancheros, but then again, I'm from Texas! And I'm new to Acorn Squash...I just cooked it for the first time a few weeks ago. The couscous and veggie stuffing sounds yummy!

I just checked out your chicken soup recipe - I always do just in case there is a new trick...

The only cooking difference beween our recipes is that I use chicken wings in stead of a whole chicken. I find that the bones give the flavor & there is a whole lot more bone ratio in the wings. (They also tend to be cheaper at Kosher Mart.)

Amy, I've never made it with wings but I have done it with a package of chicken necks! You're right, it makes good soup. Also very cheap from my kosher butcher. However, I like having all the soup chicken leftover for other dishes so using a whole pullet chicken works for me. -- Dara
