On Friday, I wound up talking to a bunch of friends about our slow cookers — some could be called evangelists for this way of cooking; others can’t see the appeal. I adore the convenience of mine, even if I don’t always think the meals are terrific. I tweeted about doing a week of all slow cooker recipes, kind of a mini version of A Year of Slow Cooking, but the ingredients I already have in the house this week don’t lend themselves to that method.

So, I need your help: this week I’m going to collect slow cooker recipes instead. I’m especially interested in vegetarian, or non-dairy chicken recipes that you make and love. I need to increase my repertoire of slow cooker dishes that I want to make over and over, like my Slow Cooker Ratatouille or Orange-Hoisin Short Ribs.

Monday: Baked Huevos Rancheros (bumped from last week, I’m going to try making individual portions in a muffin tin, rather than as one large casserole), rice, garden salad

Tuesday: Roasted beets & arugula salad with feta, roasted cauliflower on the side

Wednesday: Leftovers

Thursday: Lemon Chicken With Olives, farm share veggies, orzo

Friday: Roasted chicken drumsticks, sweet potato fries, broccoli, challah

Saturday: Order in

Sunday: Either J.’s Favorite Goulash or Smoked Beef Ribs (depending on the weather), farm share veggies, potatoes

    Well, I gave you our all-time favorite Slow Cooker recipe (Goulash!), but I will look for other good ones for you. I love the idea of a slow cooker, but agree that some recipes aren’t great. This is a fun challenge and I hope you’ll share some great finds with us!!

    I can’t wait to hear how the individual Huevos works out! I love Huevos.

    I tried it recently and made a few personal adjustments (a little less oj and a little more beans!)

    I haven’t really found any chicken recipes for the slow cooker. I’m never overly please with how the chicken tastes in slow cooker recipes.

    I came for a visit after seeing you listed at MPM. I’d love to know how the Baked Huevos Rancheros worked out too.

    I don’t have many slow cooker chicken recipes, but I’ll look and see what I have. One recipe I used to make a long time ago was Lemonade Chicken – put chicken parts (thighs are best), pour a thawed container of lemonade over them, and cook for 8 hours on Low or until done. Or at least I think that was the recipe. Like I said, it’s been a long time.

    Try your Chicken Castillo and add potatoes and a splash of red wine and tomato paste.
    Was totally delicious

    I too am a crock pot nut! I cook in mine several times a week. This past Sunday I cooked my whole meal in the crock pot. BBQ Chicken, Potatoes and Corn. I have several recipies on the blog if you want to check them out. Havea great day!

    My favorite slow cooker meal is Slow-Cooked Southwest Chicken. It’s a recipe I got from Taste of Home’s Healthy Cooking Magazine Feb/March 2009 issue. My husband raves over this dish.     Made a great chicken stew in the crock pot last week.
    Breast and thighs from a whole chicken (with bones and skin). I browned them before putting them in the crock pot. Added 3 chopped parsnips and 3 carrots, a few mushrooms and 2-3 potatoes, 2/3 cup chicken broth, rosemary, thyme, bay leaf, salt and pepper. Cooked on low for 8 hrs. When it was done I took the liquid and added a bit of cornstarch to make it a bit more like gravy. Served the whole thing with biscuits and even got the kids to eat the chicken part.

    Did I send you the crock pot chicken recipe I have? Basically, it’s salsa, black beans, pineapple and chicken – serve over rice and with sour cream if you are non-Kosher like me. My kids love love love it!

    sorry I’m late on this one – I made this soup last week and it was really good that day, but was FANTASTIC as leftovers. I think it needed a day or so to ripen…

    Crockpot Vegetarian Minestrone Soup (adopted from recipezaar)
    28 oz crushed tomatoes
    1 tbsp tomato paste
    1 bunch parsley (i left this whole and fished it out at the end)
    2 small zukes, chopped
    2 carrots, chopped
    2 stalks celery, chopped
    1/2 c. barley, rinsed
    1-2 med onions, chopped
    2 cloves garlic, chopped
    1 bay leaf
    a generous amount dried no salt italian seasoning
    1 can white beans, rinsed (i used dried beans that i’d already cooked)
    1 cup kale, chopped
    6 cups of water
    1 boullion cube (i used a pareve beef flavored one)

    Dump everything in the crockpot. Cook on low for a long time (mine was on for 8 hours or so). It tasted even better a few days later. I made my non-vegetarian because i tossed in some chicken broth and chicken bones i had on hand…
