Crockpot Vegetarian Minestrone Soup (adopted from recipezaar)
28 oz crushed tomatoes
1 tbsp tomato paste
1 bunch parsley (i left this whole and fished it out at the end)
2 small zukes, chopped
2 carrots, chopped
2 stalks celery, chopped
1/2 c. barley, rinsed
1-2 med onions, chopped
2 cloves garlic, chopped
1 bay leaf
a generous amount dried no salt italian seasoning
1 can white beans, rinsed (i used dried beans that i&#039;d already cooked)
1 cup kale, chopped
6 cups of water
1 boullion cube (i used a pareve beef flavored one)

Dump everything in the crockpot. Cook on low for a long time (mine was on for 8 hours or so). It tasted even better a few days later. I made my non-vegetarian because i tossed in some chicken broth and chicken bones i had on hand...</description>

		<description>Made a great chicken stew in the crock pot last week.
Breast and thighs from a whole chicken (with bones and skin). I browned them before putting them in the crock pot.  Added 3 chopped parsnips and 3 carrots, a few mushrooms and 2-3 potatoes, 2/3 cup chicken broth, rosemary, thyme, bay leaf, salt and pepper.  Cooked on low for 8 hrs.  When it was done I took the liquid and added a bit of cornstarch to make it a bit more like gravy.  Served the whole thing with biscuits and even got the kids to eat the chicken part.</description>

I don&#039;t have many slow cooker chicken recipes, but I&#039;ll look and see what I have.  One recipe I used to make a long time ago was Lemonade Chicken - put chicken parts (thighs are best), pour a thawed container of lemonade over them, and cook for 8 hours on Low or until done.  Or at least I think that was the recipe.  Like I said, it&#039;s been a long time.</description>
