Menu Plan Monday, 11/2 – 11/8

This past week brought mixed results, cooking-wise. Stuffed Shells and Lemon Chicken with Green Olives were successful; the Individual Huevos Rancheros were acceptable but ultimately not a good fit for my family; and the farm share beets I attempted to roast for a salad were a bust. However, the week was saved with J.’s Favorite Goulash in the slow cooker, plus whole wheat egg noodles, steamed broccoli, and acorn squash spread with a little fig jam and broiled.
In last week’s Menu Plan Monday I put out a call for some good slow cooker recipes, and I got a lot of responses, both in email and the comments on that entry. Thank you for all your help! I’m going to need a couple of weeks to fit them all into my rotation. I have a lot of sweet potatoes, cabbage, potatoes, and some kale to use from my farm share, so you will see those ingredients worked in throughout the week.
I am cooking a lot this week, but have the room to put leftovers into the freezer for another time.
Monday: Slow Cooker Creamy Onion Soup with Kale, brie & baguette
Tuesday: Slow Cooker Italian-Style Turkey Meatballs, whole wheat pasta, steamed broccoli
Wednesday: Cabbage with Turkey Sausage (I have a big cabbage from my CSA I need to use), whole wheat egg noodles
Thursday: Chicken & Sweet Potato Stew (Jen suggests subbing broth for half the wine), dinner rolls
Friday: Chicken Castillo (but Merrie’s slow cooker adaptation, with potatoes), challah
Saturday: Out to dinner
Sunday: J. grills, farm share veggies

I bought some kale yesterday thinking I might make a butternut squash and kale soup. After reading over your suggestion, I may try it instead. It sounds terrific. Sounds super yummy! I only use my slow cooker 3 times a week. Maybe next week I will plan for all 5:)

Now that my rec is on deck for this week, I’ll also mention I used boneless chicken thighs, and that it cooked much, much faster than the recipe says. I find that with all slow cooker recipes. The potatoes would have been mush if I wasn’t checking for done-ness. Enjoy!
