Menu Plan Monday, 11/9 – 11/15

Overall, I think my slow cooker-heavy week was a success. The only “do not repeat” was the Slow Cooker Potato & Kale Soup (I misread the recipe and it turned out way too thick). I’d rather make a mashed potato side dish with the kale incorporated instead (like the Broccoli Rabe & Potato Salad). The Slow Cooker Italian-Style Turkey Meatballs are always a success (with everyone but my own children, that is). The Slow Cooker Apple-Mustard Cabbage with Sausage was a surprise keeper if you have a cabbage you need to use. And although I didn’t write up the Chicken & Sweet Potato Stew yet, it was very good. I used boneless, skinless chicken breasts, a cup of vegetable stock plus a half cup of white wine, and cooked it on high for about 3 hours. By Friday I was tired of my CrockPot so I fried up some breaded chicken cutlets for dinner. Can’t go wrong with that.

We have an unusual schedule this week, with a couple weeknight dinner events plus a day off of school on Wednesday, and then family here Sunday for a bagel brunch. So my cooking responsibilities are light. And you’ll never hear me complain about that!

Monday: Pasta with Winter Greens & Walnuts (using curly kale and feta, I think) / kids eat at a school event

Tuesday: At various events / leftovers

Wednesday: Out to eat

Thursday: Mae’s Slow Cooker Salsa Chicken (with black beans and pineapple), flour tortillas, broccoli

Friday: Chicken Soup (from the freezer), noodles, edamame

Saturday: J. smokes or grills something, mashed potatoes with arugula

Sunday: Leftovers or order in

    Thanks for the recipe links.
    I just got rid of my slow cooker this week. No room in our kitchen.
    I’m learning that I can still make slow cooker recipes in my dutch oven. We had a very delicious beef stew a couple of weeks ago.
