Menu Plan Monday, 11/16 – 11/22

We have another busy week in store, with several more weeknights where some or all of us are out of the house. It’s nice to have plans but I am a homebody at heart and look forward to our schedule finally relaxing after Thanksgiving.

Mae’s Slow Cooker Mexican Chicken with Pineapple was a huge success last week, and I will definitely make it again. I did finally post about the Slow Cooker Chicken with Sweet Potatoes, too, which is also a solid recipe that I can recommend.

There was no farm share pick up on Wednesday, which is good because I’ve been seriously lax about using up my share from the week before. I did finally use our CSA butternut squash to make Roasted Butternut Squash with Blue Cheese & Walnuts, which was incredible.

This week I need to start planning and shopping for a tailgate and Thanksgiving — I need a little nudge!

Monday: Leftovers for the guys; I’m bringing Pasta with Lentils, Tomatoes & Arugula to a friend’s house

Tuesday: Slow Cooker Vegetarian Minestrone Soup (from CITK reader Rebecca), challah rolls

Wednesday: Slow Cooker BBQ Skirt Steak (I’m making this up), rolls, salad

Thursday: Baked chicken, peas, egg noodles

Friday: Eating out

Saturday: Eating out

Sunday: Boys fend for themselves (Whoo hoo! I have tickets to New Moon!)

    Our schedules are very similar this week:) Please post the soup recipe or email it to me. I want to try making soup in the slow cooker.
