Menu Plan Monday, 12/21 – 12/27

Last week didn’t go according to plan meal-wise, though I did make the Hungarian Beef & Cabbage Casserole, which was excellent. J. cooked latkes for us Saturday night, since he hadn’t had any during Hanukkah. And today we made a brisket in the Crock-Pot for the first time, which was also very good. More on the casserole and brisket on Monday. The boys have school through Wednesday, and then we’re on vacation until 2010! I’m pretty much only planning meals through the end of this week, and we’ll play it by ear while we’re all home next week. For those celebrating Christmas, have a happy holiday!

Monday: Leftover brisket, salad (mac & cheese for the boys, I’m not going to torture them 2 nights in a row)

Tuesday: Beef meatballs in sauce with penne, Roasted Carrots

Wednesday: Pretzel Chicken Tenders, peas

Thursday: Sweet Potato & Black Bean Burritos, rice, salsa & sour cream (bumped from last week)

Friday: Triple Tomato Sauce with Ziti, salad, dinner rolls

Saturday: Leftovers or order in

Sunday: Smoked Beef Ribs, Grilled Steak Fries, sauteed spinach

    Great meals this week! Can’t believe no Chinese food is planned for xmas or xmas eve:)

    I’m so glad that my husband isn’t working on Christmas Eve and Christmas. He really needs the days off.
